		<description><![CDATA[I am FROM Peru (Lima). This tasted exactly like Pollo A La Brasa (chicken on the grill) with the exception that the chicken was much drier. When truly cooked &quot;a la brasa&quot; it traps in the juices. The Aji is EXACTLY like we make it in Peru. It is not meant to be a thick paste. It is a sauce. It can be made with red, yellow, or green Aji, but yellow is more common as a sauce like this. It is not cut with Vinegar. It is made with Aji pepper, lemon (maybe that was mistaken for vinegar?), a little water, and a few &quot;secret&quot; Peruvian spices. I have tried to make dishes here like I made in Peru and they taste a little different. Water can make a HUGE difference in taste (especially since things cook AND grow in water). For the BEST Peruvian chicken (and food), you have to go to Peru to truly savor. It is wonderful. But this is a nice reminder :)]]></description>
